Enviroment
We are located in the northern part of the province of Granada, called “altiplano granadino”, plateau with an average altitude of 870 metres; this plateaus formed a huge lake million years ago, surrounded of sierras (Natural Park Sierra of Baza, Sierra of Castril, La Sagra…) with peaks that crown and dominate a charming semi-desert landscape.
A land of contrasts and history, different cultures lived here like argarica, iberian, fenician, roman and muslim, cultivating olive trees hundreds of years ago, keeping the culture of Extra Virgin Olive Oil in his people.
The weather characterized by short and warm summers and cold winter bringing snowfall in the higher elevations. During the passing of seasons the olive tree keep changing light, color and odor of the landscape.
The Extra Virgin Olive Oil of OLIBAZA is obtained of picual olives, the type of olive most stable, the best olive content in oleic acid, polyphenols and antioxidants. The olive picual tree type, adapted to the terrain of the area, have great force, short but leafy branches, because it adapted the wheather of the zone. The crops are characterized by medium-large olives, healthy and bright aspect, keeping liquid gold to later become in the best quality oil made by Olibaza.
